INGREDIENTS:

#1 Pumpkin Juice

½ cup + 1 tbsp roasted or canned pumpkin (100g + 1 tbsp)
1 tbsp fresh lemon juice
½ tsp vanilla
¼ tsp cinnamon
a pinch of nutmeg
3-5 dates, soaked in water
2 cups apple juice
1 cup water

→ serves 2

#2 Rock Cakes

200g spelt flour (1 ½ cups + 1 tbsp)
1 tsp baking powder
½ tsp baking soda
¼ tsp cinnamon
a pinch of nutmeg
½ tsp lemon zest
⅓ cup + 1 tbsp raw sugar (90g)
4 tbsp vegan butter, at room temperature
½ cup aquafaba = chickpea water (125ml)
⅓ cup dried fruit, raisins (50g)

→ makes ~ 10 cookies

#3 Sage + Onion Pumpkin Pasties

1 ½ cups spelt flour (180g)
¼ tsp salt
1 tbsp raw sugar

3-4 tbsp non dairy milk, cold
½ cup vegan butter, cold (100g)

→ sub with store bought vegan pie crust or puff pastry

1 cup roasted or canned pumpkin (150g)
2 onions, cut into rings
½ tsp sage, dried
½ tsp thyme, dried
½ tsp salt (or to taste)
½ tsp lemon zest
juice of ½ lemon
1 tsp olive oil for the skillet

→ makes ~ 12 pasties depending on the size

#4 Chocolate Lavender Cakes

1 ⅓ cups spelt flour + 1 tbsp (160g + 1 tbsp)
1 ½ tsp baking powder
½ tsp salt
3 tbsp cacao, unsweetened
1 cup ‘strong brewed’ lavender tea, or sleeping tea (250ml)
¼ cup melted vegan butter (60ml)
juice of 1/2 lemon
1 tsp vanilla
⅓ cup + 1 tbsp raw sugar (90g)
⅓ cup chocolate chunks (55g)

chocolate glaze (optional)

⅓ cup chocolate chips (55g)
2-3 drops lavender oil – (make sure it’s culinary lavender oil and therefore edible)
I didn’t mean essential sorry for the confusion!

→ 9-10 mini cakes (fill up the molds ¾ of the way)

#5 Vegan Butterbeer

for 2 servings:

2 tbsp of vegan caramel sauce*
1 cup non dairy milk (250ml)
¼ cup vegan creamer (60ml)
1 cup of either apple juice, apple cider or malted beer (250ml)*
many recipes use cream soda instead – so maybe that works too?

serve it either at room temp or with vegan whipped cream + cinnamon or cold w vegan vanilla ice cream

For the caramel:

½ cup brown or raw sugar (100g)
2 tbsp water
2 ½ tbsp vegan butter
¼ cup vegan creamer (60ml)
a healthy pinch of salt
