MORE DELICIOUS, EASY TO MAKE ONE-POT MEALS// PLANT-BASED//WFPB NO OIL//VEGAN//GLUTEN FREE

Chickpea/Potato Curry

6-7 mid- sized potatoes
1 can chickpeas (rinsed)
2 cans diced tomates
2 tbs red curry paste (optional)
1 onion
2-3 garlic gloves
A bunch of kale or some spinach
2 cups mushrooms
1 cup frozen peas
1-2 tbs corn starch or arrowroot powder
1 tsp turmeric
1/2 tsp coriander
1/2 tsp garlic
1/2 tsp onion powder
A pinch of cayenne pepper

Dice onion, mince garlic and saute both in a bit of water.
Cut mushrooms and add to pot. Cut potatoes into small pieces and brown for a few minutes.
Add all other ingredients (minus the kale) to the pot, mix well and bring to a boil. Reduce heat, cover and cook for about 25-30 min or until potatoes are done. Add cut kale and let sit for another minute.

Spicy Peanut Noodles

Vegetables of your choice (I am using broccoli, bell pepper, frozen peas and celery)
1 block tofu
1 package bean threats or rice noodles
3 tbs peanut butter
1 tbs sriracha
2 tbs soy sauce
5 cups vegetable broth
1 tsp garlic powder
1 tsp ginger powder

Bring broth to boil while cutting all your vegetables.
Add cut vegetables to the pot
Add the rest of the ingredients (minus the noodles) and mix well to make sure the peanut butter is mixed in
Add noodles. Once the noodles are in the liquid, they are done in just a minute or so

Super Vegetable Stew

1 sweet potato
1 eggplant
2 cups brussels sprouts
1 head broccoli
1 cup frozen peas
1 bell pepper
1 can diced tomatoes
1 can coconut milk
1 onion
2-3 garlic gloves
1 block tofu
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne

Dice onion, mince garlic and saute in a bit of water.
Cut all vegetables into somewhat even pieces and add to the pot. Brown a bit to bring out the flavor.
Cut tofu into small pieces and add
Add the rest of the ingredients, mix well and bring to a boil. Reduce heat, cover and cook for about 35 min or until potatoes are done
