THINGS I USED IN TODAY’S KETO BREAKFAST BAR RECIPE:

Coconut Milk:

Coconut Flour:

Shredded Coconut:

Granulated Erythritol:

Cookie Scoop:

Food Scale:

KETO COCONUT MACAROON INGREDIENTS:

1 Large Egg
3/4 Cup (200mL) full fat coconut milk
1 1/4 Cups (113g) finely shredded coconut
1/3 Cup (60g) granulated erythritol
3 Tbsps (21g) coconut flour

INSTRUCTIONS

Add all of the ingredients to a large bowl.

Mix until a thick batter forms.

Once the consistency matches mine in the video, take out a cookie scoop and scoop out 15 equal sized cookies onto a baking sheet lined with parchment paper.

Bake at 350 Degrees for around 20 minutes (or until the tops turn golden brown).

Cool the macaroons in the tray.

Once cooled enjoy!

Store them in an air-tight container in the fridge
