Hey family!! In today’s All Day Cookin’ video we’re making breakfast, supper, & dessert! For lunch we had sandwiches that we didn’t really cook…. So we skipped that part! LOL!! For supper Titus makes some Authentic Homemade Tamales! He was inspired by Cowboy Kent Rollins tamales and decided to make his own. His video will be linked below! For dessert/snack anytime you want it… LOL!,I made some delicious banana nut bread! This is a copycat version of Starbucks banana nut bread and it definitely delivered! Soooo good! We followed the entire recipe except we used chicken instead of pork. For the chicken we used Honey Hickory Rub and cooked it in the slow cooker with pineapple slices on high for 3-4 hours. We also added onion, some mild white cheese sauce, and tomatoes on top of our tamales.
3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper
In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
Starbucks Banana Nut Bread:
2 cups flour
1 teaspoon baking soda
¼ teaspoon salt
1⅛ cup sugar
½ cup vegetable or canola oil
2 tablespoons buttermilk or milk
½ teaspoon vanilla
3 bananas mashed very well
½ cup chopped walnuts (optional) We used pecans.
Preheat oven to 325 degrees.
Add flour, baking soda and salt to a small bowl and set aside.
Mix egg, sugar and oil and stir until well combined
Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.
Next add milk, vanilla and bananas and stir until incorporated.
Mix in walnuts and pour into a loaf pan.
Cook 50-75 minutes, checking regularly until a knife comes out clean.
