Overnight Breakfast Quinoa:
½ cup cooked quinoa
a few tbsp. almond butter
Ground flax seeds
Mix and mash banana put in fridge overnight microwave and heat up in the am or east cold but it’s better when warmed up.
One Skillet Mexican Quinoa:
2 cloves garlic ( I did 4)
1 jalapeno or Serrano pepper
sauté both about 1 minute
½ cup uncooked Quinoa
1 can 15 oz black beans
2 diced tomatoes
1 cup vegetable broth
add 2 tbsps cumin
1tsp crushed red pepper
salt and pepper to taste
stir and cover and simmer until the quinoa is soft.
Garnish with avocado, lime and cilantro
Eat hot or cold
Peanut butter energy balls:
Start with ½ c cooked quinoa
¼ cup almond butter
1 tbps honey (I would add a little more if I were you)
1 tsp molasses
mix and place on a cookie sheet and put in the freezer for 1 hour and transfer to the fridge there after.
