This healthy tofu vegetable salad packs a vegetarian protein punch perfect for Lunch meal or a dinner for two. It’s a crispy, crunchy, and colourful mix of appealing foods – and exceptionally healthy to boot!

The marination is extremely simple too – just imagine a bit of healthy oil, spices, some herbs, apple cider vinegar or lime, and a tsp of sesame seeds all sloshing around together – what could be better? 😉

Another reason why I had to share this tofu salad was that I was looking to share a vegan or vegetarian dish that is high in protein and low in carbs at the same time.
