Ingredients for 10 loaves, about 1/3 lb (150-160 g) each

For the poolish
• ¾ cup (100 g) of all-purpose flour
• 1 ½ cups (200 g) of bread flour
• 1 ¼ cups (300 ml) of water
• ½ tsp (2 g) of active dry yeast (or 1/5 oz-6 g of fresh yeast)

For the dough
• 1 ½ cups (200 g) of all-purpose flour
• 3 cups (400 g) of bread flour
• 1 ½ cups (350 ml) of water
• ¾ tsp (3 g) of active dry yeast (or 1/3 oz-9 g of fresh yeast)
• ½ tbsp (10 g) of malt (or sugar)
• 1 heaping tbsp (20 g) of salt
• durum flour as needed, for the pastry board
First we need to make a pre-ferment, called poolish: combine the 2 flours in a bowl, add the yeast to the water, stir to dissolve, then add to the flour. Mix well for at least 3-4 minutes. Our poolish is ready, it’s very wet as you can see; now cover with cling film and allow to rise at room temperature for at least 3 hours. 3 hours have passed and the poolish is full of bubbles. Now make the final dough, so put the poolish in a mixing bowl, take the flours and the water, in which the yeast and the malt have been dissolved, mix well and beat in the dry and wet ingredients, alternating between them, until the dough clumps around the paddle; once the dough comes together into a ball, we’ll switch to the dough hook. The dough has come together, so replace the paddle with the dough hook, then we’ll add the salt and beat at a medium speed for about 10-12 minutes, until the dough is smooth and elastic. After 12 minutes the dough has gathered around the hook; turn off the stand mixer, cover the bowl with cling film and allow to rise at room temperature for an hour. An hour has passed, now remove the cling film, dust the work surface with durum flour and turn out the dough. Now fold the dough: stretch one side and fold it over, do the same with the opposite side, fold it over, and repeat the stretch and fold with the left and right sides; pat it flat – make sure your work surface is well dusted with durum flour, to avoid sticking, you can use a dough scraper as I’m doing now – then divide the dough into 10 equal pieces, weighing around 1/3 lb (160 g) each. If you wish, you can divide it into larger pieces, 5 instead of 10 for example, depending on how big you want your loaves to be. Always keep your counter well floured to prevent the dough from sticking to it; after the dough has been divided, sprinkle the durum flour on top, cover with cling film and allow to rise for an hour, an hour and a half at room temperature. The time has come to bake our ciabatta bread, so take a piece of parchment paper and lay it on a thin wooden board, because we’ll slide the bread straight onto the hot baking tray, that is preheating in the oven right now, or a baking stone placed on the bottom of the oven. You also need a water sprayer, to spray the oven walls before closing the oven door. Take a dough scraper, lift the dough and turn it over onto the parchment paper, gently stretch it out, being careful not to lose the air trapped inside. Take 2 or 3 loaves, depending on their size and bake in a preheated static oven at 465°-480°F (240°-250°C) for the first 8 minutes, remember that the baking tray must be hot, then lower the temperature to 350°-390°F (180°-200°C) and bake for another 8 minutes, but during the last 3-4 minutes leave the oven door ajar by placing a wooden spoon in the opening to hold it open so that the steam can escape, which will give the bread a nice crispy top. Our ciabatta bread is done! Transfer the loaves to a wire rack to cool a bit, meanwhile I’ll sum up the baking step, the most important: preheat a static oven to 465°-480°F (240°-250°C), bake the bread and spray the oven with water 5-6 times, close the oven door and bake for 8 minutes; after 8 minutes, lower the temperature to 350°-390°F (180°-200°C) but, after the first 4 minutes, open the oven door and place a wooden spoon in the opening to allow the steam to escape, so that the bread will brown and crisp up. And now let’s break one open to check: as you can see, it’s nice and crispy on the outside and soft and airy on the inside, excellent with cured meats!

Stir Fried Beef & Mushrooms in Black Bean Sauce (Chinese Cooking Recipe)

Welcome to Chinese Cooking. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Chinese recipes.

Ingredients:
200g Beef Fillet
100g Button Mushrooms
½ Green Pepper
3 Cloves Garlic
5g Ginger
2 Spring Onions
200ml Blackbean Sauce
1 Egg
½ Green Pepper
1 Tbsp Cornflour

Method:
1. Finely chop the garlic and ginger
2. Roughly chop the spring onions
3. Cut green pepper into bite-size pieces
4. Cut the mushrooms into halves or quarters depending on the size of the mushrooms
5. Cut beef into thin strips and place into a bowl
6. Break the egg onto the beef, add cooking wine, soy sauce and cornflour. Mix well and leave to marinate for 10 minutes
7. Heat 2 Tbsp of oil in a wok over high heat
8. Place beef single layered in the wok, stir-fry for 2minutes or until lightly brown, remove beef but leave the oil
9. Place ginger and garlic into the wok, fry for few seconds
10. Add the mushrooms and pepper, stir fry for a minute
11. Add the black bean sauce, stir and then bring to the boil
12. Add the beef and stir-fry for a minute
13. Add spring onion
14. Transfer to a dish and serve

Today I bring Anatoli to assist me think of a gift idea. Anatoli has the great plan to make some Slavic Tiramisu. It’s basically like regular Tiramisu but is not. There is butter, condensed milk, cookies, marmelade candy and sugar. This recipe is also known as Chocolate Salami or Chocolate Sausage in Russian – Шоколадная колбаса.
Also I show you how to open tin can without a can opener, but instead with a spoon.
Anatoli is teleported to us today in a bathtub with a Russian carpet. Good.

4 Ways To Cook Salmon

Poached Salmon

INGREDIENTS
6 ounces skinless salmon fillet
Salt, to taste
Pepper, to taste
Peppercorns, to taste
1 lemon, sliced
Fresh thyme

PREPARATION
1. Fill a pan with enough water to submerge a fillet. Bring the water to a simmer.
2. Add salt, peppercorns, sliced lemon, and thyme to water.
3. Add salmon, cover the pan, and cook for 20 minutes.
4. Remove salmon from pan, and season with salt, pepper, and fresh lemon.

Pan-Fried Salmon

INGREDIENTS
6 ounces skinless salmon fillet
Salt, to taste
Pepper, to taste
Olive oil
1 lemon, sliced
Fresh thyme

PREPARATION
1. Heat oil in a nonstick skillet.
2. Season salmon with salt and pepper.
3. Lay the salmon on the skillet and watch the color rise to about two-thirds of the way up the salmon. Flip the salmon once and cook until done to taste, roughly 2-4 minutes longer.
4. Serve with lemon and thyme (optional).

Baked Salmon

INGREDIENTS
6 ounces skinless salmon fillet
Salt, to taste
Pepper, to taste
Olive oil
1 lemon, sliced
Fresh thyme

PREPARATION
1. Preheat the oven to 400˚F/200˚C.
2. Cover a sheet pan with foil or parchment paper.
3. Drizzle olive oil on the salmon, then season with salt and pepper. Top with lemon slices and thyme.
4. Bake for 10-12 minutes. (The salmon should flake easily with a fork when it’s ready.)

Parchment-Wrapped Salmon (En Papillote)

INGREDIENTS
Parchment paper or aluminum foil
6 ounces skinless salmon fillet
Salt, to taste
Pepper, to taste
Olive oil
1 lemon, sliced
Fresh thyme

PREPARATION
1. Preheat the oven to 400˚F/200˚C.
2. Fold the parchment paper in half, then open up.
3. Lay down the salmon. Drizzle oil and sprinkle salt and pepper. Lay lemon slices and thyme on top of the salmon.
4. Fold the parchment paper over the salmon, and cinch the paper together by folding it over itself along the edges.
5. Bake for 13-15 minutes or until internal temperature of salmon reaches 145˚F/63˚C.

My favorite kitchen equipment:

Makes 9 medium patties
Ingredients:
2 cans (280g) tuna
1 cup (90) rolled oats
2 eggs
1/2 large onion
2 garlic cloves
1/4 bunch chives
1/4 bunch parsley
1/2 tsp salt
1/4 tsp chili flakes or black pepper
2-3 tablespoons olive oil

Directions:
1. Drain the oil (or water) from tuna cans. place in a large bowl.
2. Finely chop onion, chive and parsley. Crush garlic. Add to the bowl.
3. Place the oats into a food processor and process for 2 minutes. Add the oat flour to the bowl.
4. Add salt and chili flakes or black pepper. mix well.
5. In a small bowl beat eggs and add to the tuna mixture. Stir until well combined. Shape into patties.
6. Heat olive oil over medium-high heat. Cook the patties for about 3-4 minutes from each side. Or until golden brown. Transfer to a plate lined with paper towel to drain.

1. Fried Channa Dal (fried Gram) & Coconut Chutney Recipe
Ingredients (Serves 4):

Freshly Grated Coconut- 1 Cup
Fried Channa Dal (fried Gram) – 1/2 cup
Green Chillies – 1-2 nos – Finely chopped
Curry Leaves
Coriander Leaves – 1 small cup
Mustard Seeds – 1 spoon
Dry Kashmiri Red Chilli – 3-4 nos
Salt – For taste

2. Onion-Tomato & Coconut Chutney
Ingredients (Serves 4)

Grated Coconut- 1 Cup
Onions (Chopped) – 2 nos
Medium sized Tomatoes (chopped) – 2nos
Channa Dal – 2 spoons
Urad Dal – 2 spoons
Green Chillies – 1-2 nos – Finely chopped
Curry Leaves
Coriander Leaves – 1 small cup
Salt – For taste

3. Onion & Coconut Chutney
Ingredients (Serves 4)

Grated Coconut- 1 Cup
Small Onions/Shallots – 100 grams (washed and peeled)
Dry Kashmiri Red Chilli – 4 nos
Curry Leaves
Salt – For taste
