Easy Vegan Pasta Recipe + what i ate in italy

Here’s my new favorite vegan pasta recipe + what I ate on my trip to Italy. Pizza, pasta and all the vegan ice cream I could find – a quick vegan northern Italy food guide some might say!

INGREDIENTS

#1 Best Vegan Tomato Sauce

~ 250 g cherry tomatoes (~8.8oz)
~ 900g big tomatoes (6-8 big toms) (~32 oz)
2 cloves garlic
1 small carrot
1 big onion or 2-3 small ones
1 tbsp tomato purée
1 tbsp olive oil
1 bay leaf
a handful of fresh thyme and or oregano
1 cup vegetable broth (250ml)
cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
salt, pepper to taste
sweetener to taste, if tomatoes aren’t sweet enough add about 1-2 tsp of sugar/agave …

200 – 350g pasta of choice (7-10.6oz)

→ serves 2-3

#2 Lazy Leftover Pesto Pasta

all eye balled amounts:

2 servings cooked pasta
juice of ½ lemon
3 tbsp green pesto, vegan
3 tbsp red pesto, vegan
¼ cup non dairy milk (60ml)
salt, pepper to taste
a handful of fresh rosemary, remove before serving
