It’s tastePINK! Welcome (BACK)! In today’s video, I’m switching things up and bringing you a cook with me style meal prep video for the ULTIMATE vegetarian chili recipe! This is a SUPER easy and affordable fall recipe that you can prepare under $20! This one pot chilli recipe can easily last you up to 4-6 servings (or even more!) Please be advised, I am a vegetarian (not a vegan), consuming both eggs AND dairy. This recipe can be modified to suit your individual dietary preferences.

INGREDIENTS // RECIPE |
5-6 cloves of fresh garlic (grated)
1.0-1.5 bell pepper (roughly chopped)
(optional) jalapeno or habanero pepper (1/3 or 1/2)
1 whole medium/large red onion (roughly chopped)
(substitute: Spanish onion or yellow onion)
1 small sweet potato (cubed)

Add 1 TBSP avocado/grapeseed/vegetable/olive oil to large pot on low heat
add garlic & sweet potato until fragrant/aromatic (5-7 min)
To season, add garlic powder, red chili pepper, McCormick Grill Mates Roasted Garlic & Herb, thyme, sage, chili powder to taste*
Add bell peppers and onions, with pot and simmer on low heat (7-10 min)
Add a pinch of Himalayan Sea Salt & McCormick Garlic Pepper Grinder
Then, add the following:
2.0-3.0 Cups of Mushroom Stock (vegan)
1 Can of diced fire roasted (garlic) tomatoes
2.5-3.0 TBSP Tomato Paste
1 Can Kidney Beans (rinsed)
1 Can Pinto Beans (rinsed)
(Substitute: Black beans)
OPTIONAL: add Adobo to taste, Cayenne Pepper & Trader Joe’s Jalapeno Hot Sauce
To Sweeten, add honey, coconut nectar*, maple syrup or brown sugar
Allow ingredients to simmer for 45 minutes on medium/medium high heat WITHOUT the lid, so mixture reduces in volume and flavor intensifies, stirring occasionally. Then, reduce heat and cover pot with lid for 15 minutes.

Add 1.5 packages of Quorn Meatless Grounds
OPTIONAL: Add more mushroom stock, tomato paste and seasonings of choice to create desired consistency & flavor

PREARE QUINOA
Add the following & bring to boil (approximately 12-15 min):
1 Cup Mushroom Stock
1/2 Cup Quinoa
1 TBSP grated garlic
McCormick Grill Mates Roasted Herb & Garlic Seasoning (to taste)
Once boiling, reduce heat & place lid on pot for 12-15 min.
