Chicken with brussel sprouts and fresh herbs is an easy, healthy and delicious one pot meal. Balsamic vinegar, fresh rosemary and thyme really take a simple chicken and vegetable dish to the next level! Enjoy!
Chicken legs and thighs (5-6 pieces)
Brussel sprouts (cut off root tip and slice in half lengthwise)
Fresh rosemary (6 springs)
Fresh thyme (6 sprigs)
Garlic (1 clove per piece of chicken)
Extra virgin olive oil (1/3 cup)
Balsamic vinegar (2-3 tablespoons)
Garlic powder (to taste)
Salt & Pepper (to taste)
Put 2-3 tablespoons of olive oil in a cast iron skillet or pan that can go from stovetop to oven. Season chicken with salt, pepper, and garlic powder. Add chicken pieces (skin side down) and let brown on each side. Remove chicken and place on a clean plate. Add a bit more olive oil to the pan and then add brussel sprouts and salt and pepper to taste.
Let brussel sprouts cook for about 3 mins then add chicken back to the pan along with the fresh herbs and garlic cloves (peeled and smashed). In a measuring cup or bowl whisk together olive oil and balsamic vinegar and pour over chicken.
Place pan in pre-heated 400 degree oven (I mistakenly said 425 degrees in the video). Cook for 18-20 mins. Chicken should be completely cooked.
