Beefy ravioli has quickly become one of my favorite soups. It’s really flexible – you can use ground beef or turkey or chicken (beef is my fav) and any veg you have on hand that needs to be used up.
Being made in the Instant Pot, it’s a no muss no fuss, one pot dealio.
****TASTY OPTIONAL ADD INS****
Magic mushroom powder, about 1-2 teaspoons (
anchovy paste, about the length of your little finger
Vegemite, 1 heaping teaspoon
oil from sun dried tomatoes, as much as you want
!!!! All of these will give you an extra umami layer of flavor. You can use any one of these ingredients or if you’re feeling frisky, all of them at the same time, just be sure to think about salt levels.
Keep in mind, Instant Pot is a just a brand name. You can easily make this in any brand of electric pressure cooker you own.
TO MAKE THIS BEEFY RAVIOLI SOUP STOVETOP: Saute the beef and veggies, as in the video. Add everything but the ravioli and simmer for about an hour. Add the ravioli, cook until done per package, taste for salt and pepper.
