Taco Quinoa Bowl

3/4 cup dry quinoa
1 1/4 cups water or broth
1/4 tsp salt
1/2 cup chopped fresh cilantro
2 tsp lime juice
2 tsp olive oil
1 tsp minced chipotle in adobo
salad greens
black beans
avocado
tomatoes
shredded cheese
chipotle yogurt sauce (below)

Rinse quinoa in fine mesh strainer. Toast in dry saucepan until grains pop. Add water and salt, cover and cook for 18-22 minutes until liquid is absorbed. Cool. Add cilantro, lime juice, olive oil and chipotle to quinoa and stir. Season with salt and pepper. Place taco quinoa in bowl with remainder of ingredients. If meal prepping, store sauce separately.

Chipotle Yogurt Sauce

1 cup whole milk yogurt
1 tsp lime zest
2 T lime juice
1 garlic clove, minced
1 T minced chipotle in adobo
salt and pepper

Mix ingredients together, salt and pepper to taste. Serve with quinoa taco bowl.

Mediterranean Chopped Salad bowl

Cooked chicken breast, if desired
diced cucmber
grape tomatoes
salad greens
olives
feta cheese
chopped parsley
walnuts
dressing of choice (I used balsamic viniagrette)

Combine ingredients in bowl. If meal prepping, store dressing separately.

Apple Cider Viniagrette

2 cups apple cider or unfiltered apple juice
1 T honey
3 T white wine or apple cider vinegar
2 T olive oil
1 T minced shallot
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dried sage

Boil apple cider on stove for 15-20 minutes, until reduced to 2/3 cup. Cool in refrigerator. When cool, combine with remaining ingredients in bowl or mason jar, whisk or shake. Serve with steakhouse salad bowl below.

Steakhouse Salad Bowl

Cooked steak or chicken
salad greens
apple cider viniagrette
shaved fennel
sliced pear
parmesan cheese
walnuts

Combine ingredients. If meal prepping, store dressing separate.
